not sure if this is actually new at starbucks or if i’d just never seen it, but it’s a mini-flatbread with chicken, served with hummus, tomatoes, carrots and cucumber. 250 calories and quite lovely! with a grande iced skinny vanilla latte, it’s a delightful 330 calorie lunch. :D

in case nobody told you guys: THESE THINGS ARE DELICIOUS.
yeah, i know, there’s not much in the way of nutritional value there, but for 80 calories and infinite yumminess, i think they’re worth it. :D
so i had a cupcake from magnolia earlier. oops.
but my friend is in town and it tasted like heaven in my mouth, so, y’know.

i got a crockpot last year, and my mom bought me a crockpot cookbook to go with it. i really like this recipe.
4 boneless chicken breasts
1 can 98% fat free cream of chicken (or mushroom) soup
1/2 cup water
3.5 tbsp dijon mustard
1 tbsp cornstarch
1/2 tsp black pepper
combine the soup, water, mustard, cornstarch and pepper, stir until smooth. pour the mixture over the chicken and cook on low 6-8 hours (or on high 3-4 hours).
4 servings, 198 calories per serving.
i love this recipe because a) cooking in a crockpot is awesome. you can throw everything in there a billion hours in advance and just let it go, b) it’s incredibly easy, and c) it’s yummy. plus, the chicken gets super tender and pretty much falls apart. i usually serve it over rice or with some baby red potatoes. also, since i always find chicken breasts in 3-packs, that’s what i generally use. if you use 3 breasts, 3 servings = 216 calories. (3 breasts for 4 servings would be 164 each, but would be quite small servings.)
this has become my new snack obsession. two crispbreads, one light laughing cow wedge and a couple of tablespoons of this fresh salsa. it’s such a delightful combination of tastes and textures that i find it extremely satisfying. 120 calories, 2g fat, 4g fiber.
